Eric Scott Mentink

Eric Scott Mentink, a beloved husband, father, and cherished friend, passed away on September 4, 2026, at the age of 65.

Born on May 3, 1961, in Chicago, Illinois, to Richard and Doris Mentink, Eric brought joy and laughter into the lives of those around him. He spent his life in the service of his community, working as a pipe layer in the construction industry, where his hard work and dedication earned him respect from all who knew him.

A true outdoorsman, Eric loved to hunt and fish on the 40 acres he called home by Lake Holcombe, Wisconsin. He would often take leisurely drives through the countryside, soaking in the beauty of nature. His love of animals was evident in his life, from helping his father on the family farm, managing beef cattle and pigs, to caring for pet pigs on his own land. He had a natural affinity for gardening and spent many joyful hours cutting wood.

Eric was a devoted NASCAR fan, with a particular admiration for Alex Bowman. He could often be seen sharing his love of the sport with friends, always with a clever quip or a smart aleck remark that could bring a smile to anyone's face. He was as much known for his great sense of humor as he was for his love of Old Milwaukee and a pack of Kool's.

Eric is survived by his loving spouse, Holly Mentink; children, Travis, Amanda, and Nicole; stepchildren, Belinda (Craig) Krysan, Aubrey (Matt) Mallor, and Benjamin (Ginevive) George; siblings, Tamara Chaffin, and Lori Mentink; in-laws, Kim (Charlene) Lynum, Lori (Dan) Lundgren, Keri (James) Mahoney, and Toby (Lorraine) Lynum; nephew, Kevin Mentink; plus, many grandchildren, family, and friends.

He is preceded in death by his parents, Richard & Doris; father in-law, John Lynum; Mother in-law, Betty Lynum; nephews, Brian Mentink and Nathan Chaffin.

Family and friends are invited to gather in celebration of Eric's life on Saturday, September 19th, with a Visitation 1:00 PM, Memorial Service 2:00 PM, at O'Connell Family Funeral Home, 1010 Newton st. Baldwin, Wisconsin.

In lieu of flowers, a memorial can be given to the discretion of the family.
